Determination of Optimal Impeller Parameters for Improved Ginger Slicing Efficiency

 The inadequacy of mechanization in the production, processing and storage ginger Nigeria has caused its market price to be among lowest international trade. This study examined selection optimal number impeller speed for an improved slicing machine. research was conducted Department Agricultural Bio-Environmental Engineering at Waziri Umaru Federal Polytechnic Birnin Kebbi during April 2019. A Completely Randomized Design (CRD) with 5 x 4 2 factorial experiment conducted. machine's performance measured according high average Efficiency Slicing, output capacity low percent scatter. moisture content used 1 hp prime mover 82.2 81.5%. data collected were analyzed using Duncan Multiple Range Test (DMRT), means separated a P0.05 level. results showed that cushion compartment had best Slicing 56.8% 350 rpm speed, one gang, 25.6 g/sec 4.2 g scatter, respectively.
